Pig Candy

From the Big Green Egg Website

I had made bacon on my Egg a couple of times before making this recipe. But because my bacon was such a hit at Thanksgiving I decided to make it again for Easter and bring to my in-laws as an appetizer. I knew I wanted extra for home so I made a 7-pound bacon (normally I do around 3 pounds).

What to do with all this extra bacon?! Hmmm? About a year earlier I had read about Pig Candy on Twitter. I was intrigued. I knew that I wanted to make it with homemade bacon. Now I have to make this every time I make bacon.

Place baking sheet in the EGG and allow to cook until the bacon starts to crisp. Then brush the top of the bacon with maple syrup, flip the bacon and brush the other side with maple syrup as well.

I ended up drizzling the syrup on top of the bacon instead. I brushed one piece of bacon and the sugar almost came off! Noooooooooo!

Allow to continue to cook until it is to your preference of doneness. Remove and serve.

*You may serve it with a small side of additional maple syrup for dipping if you’d like it to be extra sweet!
