Quite possibly the best Cuban sandwich you’ll ever have. The secret is the Roast Mojo Pork.
EGGcessories Needed:
Cast Iron Plancha
Heavy Duty Oven Mitts
Ingredients
- ¾ lb thinly sliced Roast Mojo Pork
- Six 6-inch-long soft Cuban baguettes or heros, split lengthwise
- Softened butter, for brushing
- 6 oz thinly sliced grilled ham
- ½ lb thinly sliced Swiss cheese
- 3 half-sour dill pickles, thinly sliced lengthwise
- Yellow mustard, for brushing
Directions
Set the Egg to direct heat at 400 degrees.
Preheat your plancha.
Grill the sliced pieces.
This shouldn’t take to long. Less than a minute a side. You just want to brown it a little or it will dry out.
Cut baguettes approximately 9″ long.
Butter inside of baguette or roll and put some butter on the plancha.
Toast baguette halves until golden brown.
This too doesn’t take very long. You’ll start to see it brown on the edges, but it’s good to check from time to time.
Once the baguettes are done put your small cast iron pan in the Egg and shut the lid so it heats up.
You’re going to need some serious oven mitts to handle that pan! Mine handle heat up to 900 degrees and I could still feel the heat.
Build your Cubanos. From bottom up, layer: pork, ham, 2 pickle slices, Swiss cheese
I switched the order of the pickles and the cheese. When I used 2 pickles they started slide off the sandwich, but 1 pickle wasn’t enough. I’m hoping the cheese will help hold it in place.
Slather mustard from edge to edge on top bun. Close sandwich.
Generously brush melted butter on top of bread.
Butter heated plancha and press while counting to thirty. Flip the sandwich and press to thirty again.
Roy Choi used a Panini press. This was my homemade panini press. There’s no pictures of the process because I don’t have a third hand. 😉
Cut the sandwiches in half and serve.
