Jambalaya

This is a great recipe if you want to whip something up fairly quickly with minimum fuss. Also makes a great “game day” dinner.

Ingredients

  • 1/2 lb of thick cut bacon
  • 1 chicken breast
  • 2 lbs of kielbasa
  • 1 onion
  • 1 green pepper
  • 1 red bell pepper
  • 4 celery stalks
  • 1/2 cup of Cajun seasoning of your choice
  • 8 oz can of Rotel diced tomatoes with green chilies
  • 2 cups of uncooked rice
  • 32 oz of chicken broth

Instructions

Dice all the ingredients.

Add ConvEGGtor to the Big Green Egg.

Warm Big Green Egg to 400° Fahrenheit.

Add Dutch oven and heat for 5 minutes.

Diced bacon in a Dutch oven.

Add bacon to the Dutch oven and stir.

Cook for 10 minutes.

Diced chicken and kielbasa in a Dutch oven.

Add chicken and kielbasa to the Dutch oven and stir.

Cook for 10 minutes.

Onion, peppers, and celery mixed into chicken and kielbasa.

Add onion, both peppers, and celery to Dutch oven and stir.

Cook for 20 minutes.

Diced tomatoes and Cajun seasoning added to the Dutch oven.

Add Cajun seasoning and rotel tomatoes and stir.

Uncooked rice added to the Dutch oven.

Add uncooked rice and stir.

Chicken broth filling the Dutch oven almost to the rim.

Add chicken broth, cover the Dutch oven, and cook for 20 minutes, stirring occasionally.

Jambalaya in a bowl.

Remove from Big Green Egg and serve.

  6. Cook for 10 minutes.

  7. Add chicken and kielbasa to Dutch oven and stir.

  8. Cook for 10 minutes.

  9. Add onion, both peppers, and celery and stir.

  10. Cook for 20 minutes.

  11. Add Cajun seasoning and can of rotel tomatoes and stir.

  12. Add uncooked rice and stir.

  13. Add chicken broth and stir.

  14. Cover Dutch oven and cook for 20 minutes, stirring occasionally.

  15. Remove from heat and serve.
